David Finlayson is a master of the blend and has perfected a choral harmony from three varieties: Sémillon, Sauvignon Blanc and Viognier. Sauvignon Blanc provides the typical bolt of zesty freshness, while the Sémillon gives a welcoming firm mouth-feel and educated waxiness.
